Ingredients
  

  • 1 cup 2 sticks or 226g unsalted butter, softened
  • 3/4 cup 150g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract optional, but recommended
  • 2 1/2 cups 315g all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Jimmies sprinkles, or sanding sugar for decorating (optional)

Method
 

  1. In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy. This usually takes about 2-3 minutes.
  2. Beat in the egg, vanilla extract, and almond extract (if using) until well combined. Scrape down the sides of the bowl as needed.
  3. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix; the dough should be soft and pliable.
  5. Load the dough into your cookie press fitted with your desired disc. Press cookies onto ungreased baking sheets, leaving about 1 inch between them.
  6. If desired, decorate the cookies with sprinkles, jimmies, or sanding sugar before baking.
  7. Bake in a preheated oven at 375°F (190°C) for 7-10 minutes, or until the edges are lightly golden. Watch them closely as they can brown quickly.
  8. Let the cookies cool on the baking sheets for a minute or two before carefully transferring them to a wire rack to cool completely.
