Preheat your oven to 375°F (190°C).
In a small bowl, combine the minced garlic, olive oil, chopped rosemary, thyme leaves, and black pepper. Mix well.
Place the softened goat cheese log in the center of a small oven-safe skillet or baking dish. Score the top of the goat cheese log a few times with a knife.
Pour the garlic and herb oil mixture evenly over the top of the goat cheese.
Drizzle 2 tablespoons of honey over the goat cheese and oil mixture.
Bake for 15-20 minutes, or until the goat cheese is softened, warm, and slightly bubbly around the edges.
Remove from the oven and drizzle with a little extra honey just before serving.
Serve immediately with your favorite dippers.
