Spread the seasoned potatoes in a single layer on a large baking sheet. Avoid overcrowding the pan, as this can steam the potatoes instead of roasting them, hindering crispiness.
Roast for 35-45 minutes, flipping the potatoes halfway through, until they are tender on the inside and golden brown and crispy on the outside. The exact time will depend on your oven and the size of your potato cubes.
Once cooked to perfection, remove from the oven. Garnish with fresh chopped parsley before serving hot.
