Ingredients
  

  • 2 lbs Yukon Gold or red potatoes scrubbed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried rosemary optional
  • 1/2 teaspoon dried thyme optional
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed potatoes with olive oil, ensuring each piece is lightly coated. Add the minced garlic, grated Parmesan cheese, rosemary and thyme (if using), salt, and pepper. Toss everything together until the potatoes are evenly seasoned.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet. Avoid overcrowding the pan, as this can steam the potatoes instead of roasting them, hindering crispiness.
  4. Roast for 35-45 minutes, flipping the potatoes halfway through, until they are tender on the inside and golden brown and crispy on the outside. The exact time will depend on your oven and the size of your potato cubes.
  5. Once cooked to perfection, remove from the oven. Garnish with fresh chopped parsley before serving hot.
