In a medium-sized bowl, combine the instant coffee granules, granulated sugar, and hot water. The hot water helps dissolve the coffee and sugar more effectively.
Using a hand mixer or a whisk, begin to whip the mixture. If using a hand mixer, start on low speed and gradually increase. If whisking by hand, be prepared for a bit of an arm workout! Continue whipping until the mixture becomes thick, glossy, and forms stiff peaks – it should hold its shape when you lift the beaters or whisk.
Fill a tall glass with ice cubes if you're making an iced Dalgona coffee. Pour your milk of choice over the ice, leaving about an inch of space at the top.
Gently spoon the whipped coffee mixture on top of the milk. It should float beautifully. If you're making a hot version, simply warm your milk and pour it into a mug before topping with the whipped coffee.
