Ingredients
  

  • 1 ½ cups warm water 105-115°F
  • 2 tablespoons olive oil plus extra for greasing
  • 1 tablespoon honey or maple syrup
  • 1 ½ teaspoons salt
  • 1 ½ cups gluten-free all-purpose flour blend ensure it contains xanthan gum
  • ½ cup almond flour
  • ½ cup tapioca starch
  • ¼ cup potato starch
  • 2 teaspoons active dry yeast
  • 1 teaspoon xanthan gum omit if your flour blend already contains it

Method
 

  1. Prepare your bread machine by ensuring the baking pan is clean and lightly greased. Add the ingredients to the bread machine pan in the order recommended by your manufacturer, typically liquids first, followed by dry ingredients, and finally, the yeast.
  2. Ensure the yeast does not come into contact with the liquid until you're ready to start the cycle. Secure the lid of the bread machine.
  3. Select the appropriate setting for your bread machine. For gluten-free bread, a 'Gluten-Free', 'Sweet', or 'Basic' cycle on a medium crust setting usually works best. Consult your machine's manual for specific recommendations.
  4. Start the bread machine and let it run through its complete cycle. This typically takes between 2.5 to 4 hours, depending on your machine.
  5. Once the cycle is complete, carefully remove the bread pan from the machine. Use oven mitts as the pan will be hot. Gently invert the pan to release the loaf onto a wire cooling rack. If the loaf is sticking, gently shake the pan or use a silicone spatula to loosen the edges.
  6. Allow the bread to cool completely on the wire rack before slicing. This is crucial for gluten-free bread to set properly and achieve the best texture. Slicing while warm can result in a gummy texture.
