Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 ¼ cups water
  • 1 large egg
  • 3 tablespoons melted butter or vegetable oil
  • Optional toppings: maple syrup fresh fruit, whipped cream, chocolate chips

Method
 

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar. Whisk to combine and ensure there are no lumps.
  2. In a separate medium bowl, whisk together the water, egg, and melted butter (or oil) until well combined.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or fork until just combined. A few small lumps are perfectly fine – do not overmix, as this can lead to tough pancakes.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat. The pan is ready when a drop of water sizzles and evaporates quickly.
  5. Pour or scoop the batter onto the hot griddle, using approximately ¼ cup for each pancake. Cook for about 2-3 minutes per side, or until golden brown and bubbles appear on the surface.
  6. Flip the pancakes and cook for another 1-2 minutes on the other side until cooked through and golden.
  7. Serve immediately with your favorite toppings.
