Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the quartered potatoes, minced garlic, olive oil, dried rosemary, dried thyme, smoked paprika, salt, and pepper. Toss everything together until the potatoes are evenly coated.
Spread the seasoned potatoes in a single layer on a baking sheet. Ensure they are not overcrowded, as this will steam them instead of roasting.
Roast for 30-40 minutes, flipping halfway through, until the potatoes are tender on the inside and golden brown and crispy on the outside.
Once roasted to perfection, remove from the oven. Garnish with fresh chopped parsley before serving.
