If you haven't already, cook your brown rice according to package directions. A rice cooker is highly recommended for perfectly fluffy rice every time.
While the rice is cooking or once it's done, prepare the other components. In a large mixing bowl, combine the rinsed black beans, corn kernels, diced red bell pepper, chopped red onion, and fresh cilantro.
In a small bowl, whisk together the salsa, lime juice, olive oil, cumin, chili powder, salt, and pepper to create the dressing. Taste and adjust seasonings as needed.
Once the brown rice is cooked and slightly cooled, add it to the large mixing bowl with the bean and vegetable mixture.
Pour the dressing over the rice and vegetable mixture. Gently toss everything together until well combined. Ensure all ingredients are evenly coated.
Just before serving, gently fold in the diced avocado.
If adding an optional protein, arrange it on top of or mixed into the bowl.
