Course: Basics

Ingredients

  • 3 tablespoons chili powder ancho or a blend
  • 1 tablespoon smoked paprika
  • 2 teaspoons cumin powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper or more, to taste
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt optional, adjust to taste

Method

  1. Gather all your spices. For the best flavor, use fresh, good-quality spices. If your chili powder is a blend, you can adjust the other spices accordingly.
  2. In a small bowl, combine the chili powder, smoked paprika, cumin powder, garlic powder, onion powder, cayenne pepper, dried oregano, black pepper, and salt (if using).
  3. Whisk the ingredients together thoroughly until well combined. Ensure there are no clumps and the spices are evenly distributed.
  4. If you prefer a finer texture or want to bloom the spices further, you can briefly pulse the mixture in a spice grinder or use a mortar and pestle. Be careful not to over-grind, as this can make the spices bitter.
  5. Transfer the seasoned chili blend to an airtight container for storage.
