Form the beef mixture into 2-4 patties, depending on your desired size. Flatten them slightly as they will shrink during cooking.
Heat the olive oil in a large skillet over medium-high heat. Once shimmering, carefully place the patties in the skillet.
Cook for 4-5 minutes per side for medium, or longer to your desired doneness. Remove patties from skillet and set aside.
While the burgers are cooking, prepare the burger sauce. In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish (if using), and Worcestershire sauce. Set aside.
Assemble your burger bowls. Divide the chopped lettuce among two bowls. Top with the cooked burger patties (you can crumble them or leave them whole).
Add the halved cherry tomatoes, diced red onion, shredded cheddar cheese, crumbled bacon (if using), and sliced pickles to each bowl.
