Ingredients
  

  • 2 6-ounce red snapper fillets, skin on or off
  • 2 tablespoons olive oil
  • 1 lemon half thinly sliced, half juiced
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Pinch of red pepper flakes for a little heat

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the red snapper fillets dry with paper towels. This helps ensure a nice texture.
  3. Place the fish fillets on the prepared baking sheet. Drizzle evenly with olive oil.
  4. In a small bowl, whisk together the lemon juice, minced garlic, chopped parsley, chopped dill, salt, pepper, and optional red pepper flakes.
  5. Spoon or brush the lemon-herb mixture evenly over the top of each red snapper fillet.
  6. Arrange the thin lemon slices on top of the fish.
  7. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. The exact cooking time will depend on the thickness of your fillets.
  8. Remove from oven and let rest for a minute before serving.
