  • 3 lbs chicken wings separated into drumettes and flats, tips removed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 1 cup 2 sticks unsalted butter
  • 4-6 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 cup chopped fresh parsley for garnish
  • 1 tablespoon chopped chives for garnish (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Pat the chicken wings thoroughly dry with paper towels. This is crucial for achieving crispy skin. In a large bowl, toss the wings with olive oil, salt, black pepper, garlic powder, smoked paprika, onion powder, and cayenne pepper (if using). Ensure each wing is evenly coated.
  3. Arrange the seasoned wings in a single layer on the prepared baking sheet, making sure they aren't overcrowded. This allows for better air circulation and crispier results.
  4. Bake for 40-50 minutes, flipping the wings halfway through, until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
  5. While the wings are baking, prepare the cowboy butter sauce. In a medium saucepan over medium-low heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  6. Stir in the Worcestershire sauce, dried oregano, and dried thyme. Simmer for another minute to allow the flavors to meld. Remove from heat.
  7. Once the wings are done baking and crispy, transfer them to a large, clean bowl. Pour the warm cowboy butter sauce over the wings.
  8. Toss gently until all the wings are generously coated in the luscious sauce. Garnish with fresh chopped parsley and chives (if using).
