Ingredients
  

  • 1 lb ground beef 80/20 or 90/10 recommended
  • 1 tablespoon olive oil or vegetable oil
  • 1 medium yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons brown sugar or honey/maple syrup
  • 1 tablespoon gochujang Korean chili paste - adjust to spice preference
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • Optional: pinch of red pepper flakes for extra heat
  • Cooked rice for serving
  • Optional garnishes: sliced green onions sesame seeds, a fried egg

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and crumbly. Drain off any excess grease.
  2. Add the finely chopped onion to the skillet with the browned beef. Cook for about 5-7 minutes, stirring occasionally, until the onion is softened and translucent.
  3. Stir in the minced garlic and grated ginger. Cook for another minute until fragrant, being careful not to burn the garlic.
  4. In a small bowl, whisk together the soy sauce, brown sugar, gochujang, sesame oil, black pepper, and optional red pepper flakes. This is your flavor magic sauce!
  5. Pour the sauce mixture over the ground beef and onion mixture in the skillet. Stir well to coat everything evenly. Let it simmer for 3-5 minutes, allowing the sauce to thicken slightly and the flavors to meld.
  6. Serve the spicy ground beef mixture hot over bowls of fluffy cooked rice. Top with your favorite garnishes like sliced green onions, toasted sesame seeds, or a perfectly fried egg for an extra special touch.
