  • 1 lb mixed Italian deli meats such as salami, capicola, mortadella, ham, thinly sliced
  • 8 oz provolone cheese thinly sliced
  • 1/2 cup chopped pepperoncini peppers jarred, drained
  • 1/2 cup chopped Kalamata olives pitted
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Crusty Italian bread hoagie rolls, or focaccia for serving

Method
 

  1. Prepare the Meats and Cheeses: Thinly slice all your chosen Italian deli meats and provolone cheese. The thinner the slices, the easier they are to chop uniformly.
  2. Chop Everything: In a large bowl, combine the thinly sliced meats and cheeses. Add the chopped pepperoncini peppers, Kalamata olives, red onion, fresh parsley, and fresh basil.
  3. Make the Dressing: In a small bowl, whisk together the mayonnaise, red wine vinegar, Dijon mustard, dried oregano, and garlic powder. Season with salt and pepper to your liking. Taste and adjust seasonings as needed.
