  • 1/4 cup heavy cream or milk
  • 2 tablespoons unsalted butter
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. In a medium bowl, whisk together the eggs, heavy cream (or milk), a pinch of salt, and a generous grind of black pepper until well combined and slightly frothy. Ensure the yolks and whites are fully incorporated.
  2. Melt the butter in a non-stick skillet over medium-low heat. Swirl the pan to coat the bottom evenly.
  3. Pour the egg mixture into the heated skillet. Let the eggs cook undisturbed for about 30 seconds until the edges begin to set.
  4. Using a spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow the uncooked egg to flow underneath. Continue this process, folding and stirring gently, until the eggs are mostly set but still have a glossy, slightly wet appearance. Avoid overcooking, as this will result in dry, rubbery eggs.
  5. Remove the skillet from the heat immediately. The residual heat will continue to cook the eggs to a perfect creamy consistency.
  6. Serve the posh eggs immediately. Garnish as desired with your chosen toppings.
