Ingredients
  

  • 2 cups cooked chicken shredded (rotisserie chicken recommended for ease)
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon lemon zest
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup toasted slivered almonds or chopped pecans for crunch

Method
 

  1. In a large mixing bowl, combine the shredded chicken, finely chopped celery, and finely chopped red onion.
  2. Add the fresh parsley, dill, and chives to the bowl. Gently toss to distribute the herbs evenly throughout the chicken mixture.
  3. In a small separate bowl, whisk together the fresh lemon juice, extra virgin olive oil, Dijon mustard, and lemon zest. Season with salt and freshly ground black pepper to your liking. This is your vibrant dressing!
  4. Pour the lemon-herb dressing over the chicken mixture. Toss gently until all ingredients are well combined and coated.
  5. If using, stir in the toasted almonds or pecans for an added layer of texture and nutty flavor.
  6. Taste and adjust seasoning if necessary, adding more salt, pepper, or a squeeze of lemon juice as needed.
  7. Cover the bowl and refrigerate for at least 15-20 minutes to allow the flavors to meld together before serving.
